Ingredients
1 1/2 lbs. Boneless skinless chicken breasts cut into pieces, 1/2 cup Almond flour, 2 Large eggs beaten, 1 1/2 cup Beef rind crumbs, 1/3 cup (80 ml) Parmesan cheese, 1/2 tsp. Garlic powder, 1/2 tsp. Onion powder, 1/2 tsp. Paprika, 1/2 tsp. Oregano, Salt and pepper to taste
Instructions
Preheat the air fryer to 400°F and grease the pan or rack. In a shallow dish, mix the beef rind crumbs, Parmesan, garlic powder, onion powder, paprika, oregano, salt, and pepper. Place the almond flour in another shallow dish. In a third bowl, whisk the eggs until smooth. Coat the chicken pieces in almond flour. Dip the chicken in the beaten eggs. Cover the chicken with the beef rind mixture and place on the greased pan or rack. Cook in the air fryer for 8-10 minutes until crispy and golden.
