Ingredients
- 5 lb (680 g) Chicken Breasts, 3-4 large chicken breasts, patted dry, cut into bite-sized pieces
- 5 tbsp (23 ml) Italian Seasoning
- 3tsp (15 ml) Garlic Powder
- 1/4tsp (1 ml) Natural Ancient Sea Salt, or more to taste
- 1/2tsp (3 ml) Black Pepper
- 3tbsp (45 ml) Olive Oil, vegetable oil or avocado oil
- 3cup (720 ml) Keto Alfredo Sauce, click for recipe (I doubled my keto alfredo sauce recipe) or use jarred sauce
- 3cup (720 ml) broccoli florets, fresh, steamed for 2 minutes in the microwave
- 2cup (480 ml) Mozzarella Cheese, shredded
Instructions
- Combine the Italian seasoning, salt, pepper, and garlic powder in a small bowl.
- Place the chicken pieces in a large bowl, sprinkle the spice mixture over them, and toss to ensure an even coating.
- Warm olive oil in a cast-iron skillet or frying pan over medium heat.
- Sauté the chicken pieces for 3-4 minutes on each side, or until they reach an internal temperature of 160 degrees Fahrenheit (they will continue cooking up to 165 degrees as they rest).
- Take the pan off the heat.
- Pour half a cup of alfredo sauce into the base of a large 9×13 baking dish and spread it evenly.
- Layer half the chicken and broccoli on top, followed by 1 cup of alfredo sauce spread evenly and 1 cup of shredded mozzarella cheese.
- Repeat the layering process with the remaining sauce, chicken, and cheese.
- Set the broiler to a low setting and place the dish under it for 2-4 minutes until the cheese melts and begins to brown slightly.
- Optionally, garnish the finished dish with fresh parsley before serving.
Notes
- Marinate chicken in spice mixture for 30 minutes before cooking for enhanced flavor.
- Use freshly grated mozzarella cheese for a creamier texture and better melting.
- Sprinkle grated Parmesan cheese on top before broiling for an extra layer of flavor.
