Ingredients
- 2 ripe bananas
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup erythritol (or other sweetener)
- 4 large eggs
- 1/2 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a large bowl.
- Add the eggs, applesauce, and vanilla extract to the mashed bananas and mix well.
- Combine the almond flour, coconut flour, erythritol, baking powder, baking soda, and salt in another bowl.
- Gradually mix the dry ingredients into the wet ingredients until fully combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Cool before slicing and enjoy!
Notes
Use very ripe bananas for better sweetness and moisture. Consider folding in nuts or sugar-free chocolate chips for added texture.
