Ingredients

  • – 3 medium zucchini (about 600g)
  • – 2 tablespoons vegetable oil (30ml)
  • – 1 medium sweet onion, coarsely chopped
  • – 2 tablespoons soy sauce (30ml)
  • – 1/4 to 1/2 teaspoon (3 ml) crushed red pepper flakes
  • – 1/4 teaspoon (1 ml) black pepper
  • – 1 teaspoon (5 ml) toasted sesame seeds

Instructions

  1. Slice the zucchini into pieces that are about 2 inches long, then divide each section into 6 wedges.
  2. Warm up vegetable oil in a large nonstick pan over medium-high heat.
  3. Combine the zucchini and chopped onion in the pan, cooking them for 2 minutes.
  4. Incorporate soy sauce, crushed red pepper flakes, and black pepper, stirring them in. Continue to cook for another 4 to 5 minutes, or until the vegetables reach your preferred tenderness.
  5. Garnish with toasted sesame seeds before serving.

Notes

  • Marinate zucchini in soy sauce and spices for 15-30 minutes before cooking for enhanced flavor.
  • Add bell peppers or mushrooms for extra texture and taste.
  • Adjust red pepper flakes to suit your preferred level of spiciness; squeeze lemon juice before serving for a hint of freshness.
