Description
A healthy and flavorful turkey meatloaf made with lean ground turkey, mushrooms, and panko breadcrumbs, bringing comfort food into a lighter realm.
Ingredients
- 1 to 1 ¼ lb ground turkey (90% lean)
- 8 oz mushrooms, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp oil
- ¾ tsp salt
- ½ tsp pepper
- 1 tbsp Worcestershire sauce
- 7 tbsp ketchup, divided
- 1 cup panko breadcrumbs
- â…“ cup milk
- 2 eggs, lightly beaten
Instructions
- Preheat your oven to 400°F (204°C) and line a baking pan with foil, lightly oiling the foil to prevent sticking.
- In a pan, cook the finely chopped onions in oil until they soften, about 5 minutes.
- Add the minced garlic and chopped mushrooms to the pan, seasoning with salt and pepper. Cook for an additional 10 minutes until the mushrooms dry out.
- Mix the mushroom mixture with Worcestershire sauce and 3 tablespoons of ketchup. Allow it to cool for about 5 minutes.
- Combine panko breadcrumbs and milk in a separate bowl. Stir this mixture into the mushroom mix, followed by the eggs and ground turkey. Mix gently to combine all ingredients.
- Shape the mixture into a loaf and place it in the prepared baking pan. Top with the remaining ketchup.
- Bake for 50 minutes, or until the internal temperature reaches 170°F (77°C).
- Allow the meatloaf to rest for 10 minutes before slicing.
Notes
For added flavor, consider adding fresh herbs like parsley or thyme. Ensure not to overmix to maintain a fluffy texture.
