Description

A healthier take on classic meatloaf made with ground turkey and mushrooms, providing a satisfying meal for the whole family.

Ingredients

  • 1 to 1 ¼ lbs ground turkey (90% lean)
  • 8 oz finely chopped mushrooms
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • Worcestershire sauce, to taste
  • ⅓ cup milk
  • 2 lightly beaten eggs
  • Panko breadcrumbs, as needed
  • Ketchup, for topping

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Line a baking pan with foil and lightly oil it.
  3. In a pan, cook the chopped onions in oil until they soften.
  4. Add the minced garlic and chopped mushrooms, seasoning with salt and pepper, and cook for about ten minutes.
  5. Remove the mixture from heat and allow it to cool.
  6. Once cooled, mix the mushroom blend with Worcestershire sauce and 3 tablespoons of ketchup.
  7. In a separate bowl, combine panko breadcrumbs with milk.
  8. In another bowl, mix the cooled mushroom blend, breadcrumbs, eggs, and ground turkey until well combined.
  9. Shape the mixture into a meatloaf form on the prepared baking pan and top with remaining ketchup.
  10. Bake for 50 minutes or until the internal temperature reaches 170°F (77°C).
  11. Allow the meatloaf to rest for ten minutes before slicing.

Notes

Ensure mushrooms and onions are finely chopped for even texture. Let the mixture rest before baking to absorb moisture.
