A healthier take on classic meatloaf made with ground turkey and mushrooms, providing a satisfying meal for the whole family.
Ingredients
- 1 to 1 ¼ lbs ground turkey (90% lean)
- 8 oz finely chopped mushrooms
- 1 onion, finely chopped
- 2 garlic cloves, minced
- Salt, to taste
- Pepper, to taste
- Worcestershire sauce, to taste
- ⅓ cup milk
- 2 lightly beaten eggs
- Panko breadcrumbs, as needed
- Ketchup, for topping
Instructions
- Preheat your oven to 400°F (204°C).
- Line a baking pan with foil and lightly oil it.
- In a pan, cook the chopped onions in oil until they soften.
- Add the minced garlic and chopped mushrooms, seasoning with salt and pepper, and cook for about ten minutes.
- Remove the mixture from heat and allow it to cool.
- Once cooled, mix the mushroom blend with Worcestershire sauce and 3 tablespoons of ketchup.
- In a separate bowl, combine panko breadcrumbs with milk.
- In another bowl, mix the cooled mushroom blend, breadcrumbs, eggs, and ground turkey until well combined.
- Shape the mixture into a meatloaf form on the prepared baking pan and top with remaining ketchup.
- Bake for 50 minutes or until the internal temperature reaches 170°F (77°C).
- Allow the meatloaf to rest for ten minutes before slicing.
Notes
Ensure mushrooms and onions are finely chopped for even texture. Let the mixture rest before baking to absorb moisture.
