Description

A vibrant and flavorful Jamaican Curry Chicken dish that combines traditional Caribbean spices with creamy coconut milk.


Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 tsp allspice
  • 1 tsp dried thyme
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can coconut milk
  • Salt and pepper to taste
  • Fluffy white rice (for serving)
  • Rice and peas (optional for serving)


Instructions

  1. In a bowl, mix the chicken with curry powder, allspice, thyme, salt, and pepper. Let it marinate for at least 30 minutes.
  2. In a large pot, sauté chopped onion, garlic, and bell pepper until soft.
  3. Add the marinated chicken pieces and brown them on all sides.
  4. Pour in the coconut milk and bring to a simmer.
  5. Cover the pot and let it cook on low heat for about 30-40 minutes, until the chicken is cooked through.
  6. Serve the curry chicken over fluffy white rice or alongside rice and peas.

Notes

For optimal flavor, allow chicken to marinate for up to 2 hours. Adjust spice levels to personal preference and consider adding vegetables for additional nutrition.
