Ingredients

  • – 3 large zucchini (about 680g), halved
  • – 8 ounces (227g) cream cheese, softened
  • – 1 cup (113g) shredded beef strips Jack Cheese
  • – 1 cup (113g) shredded cheddar cheese
  • – 2 jalapenos, finely chopped
  • – 1/2 teaspoon (3 ml) garlic powder
  • – 6 slices beef bacon, cooked and crumbled

Instructions

  1. Set your oven to 400°F (200°C) and allow it to warm up. Scoop out the seeds from each zucchini half, creating enough space for the stuffing.
  2. Arrange the zucchini halves on a baking tray and bake them for 10 minutes.
  3. Combine the cream cheese, Pepper Jack, cheddar, chopped jalapenos, garlic powder, and crumbled beef bacon in a medium-sized bowl.
  4. Evenly distribute the cheese mixture among the zucchini halves. Return to the oven and bake for an additional 12 to 15 minutes.

Notes

  • Thoroughly blend cream cheese, Pepper Jack, cheddar, jalapenos, garlic powder, and crumbled beef bacon for a flavorful filling.
  • Monitor zucchini while baking to achieve desired tenderness.
  • Adjust jalapeno quantity in the stuffing for a customized level of spiciness.
