Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil (15 ml)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning (5 ml)
  • 1 cup marinara sauce (240 ml)
  • 1 cup (240 ml) shredded mozzarella cheese (about 113 grams)
  • 1/2 cup (120 ml) grated Parmesan cheese (about 50 grams)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the chopped onion and sauté until translucent.
  5. Stir in the minced garlic and cook for 1 minute.
  6. Add the zucchini slices to the skillet.
  7. Sprinkle with Italian seasoning, salt, and black pepper.
  8. Cook until the zucchini is slightly softened, about 5 minutes.
  9. Spread half of the marinara sauce in a baking dish.
  10. Layer half of the cooked zucchini over the sauce.
  11. Sprinkle half of the mozzarella and Parmesan cheese over the zucchini.
  12. Repeat the layers with the remaining zucchini, sauce, and cheeses.
  13. Cover the dish with foil.
  14. Bake in the preheated oven for 20 minutes.
  15. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  16. Let the dish cool for a few minutes before serving.
