Ingredients
- 2 medium zucchinis

- 1 cup marinara sauce (240 ml)
- 1 cup (240 ml) shredded mozzarella cheese (about 113 grams)
- 1/2 cup (120 ml) grated Parmesan cheese (about 50 grams)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis into thin rounds.
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for 1 minute.
- Add the zucchini slices to the skillet.
- Sprinkle with Italian seasoning, salt, and black pepper.
- Cook until the zucchini is slightly softened, about 5 minutes.

- Sprinkle half of the mozzarella and Parmesan cheese over the zucchini.
- Repeat the layers with the remaining zucchini, sauce, and cheeses.
- Cover the dish with foil.
- Bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
- Let the dish cool for a few minutes before serving.
