Description

A comforting soup that blends savory ground turkey with fresh vegetables, offering a hearty meal perfect for weeknight dinners or gatherings.


Ingredients

  • 1½ pounds ground turkey breast
  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1½ cups sliced carrots
  • 1½ cups sliced celery
  • 28-ounce can of diced tomatoes
  • 3 cups beef broth
  • 4 tablespoons tomato paste
  • Fresh or dried herbs (basil, oregano, thyme)
  • Pinch of chili pepper flakes
  • ¼ cup fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey, salt, and pepper. Cook until the turkey browns evenly. Stir in onions and garlic. Cook until onions are translucent, about 3-4 minutes.
  2. Transfer the mixture to a Dutch oven or large pot.
  3. In the same skillet, sauté sliced carrots and celery until slightly tender, about 5 minutes. Add them to the pot.
  4. Deglaze the skillet with the canned tomatoes, scraping any browned bits from the bottom. Add extra flavor.
  5. Pour in beef broth and tomato paste to the pot, along with your choice of herbs. Bring everything to a boil.
  6. Reduce heat and let the mixture simmer for 30 to 40 minutes, stirring occasionally.
  7. Stir in fresh parsley in the last 5-10 minutes of cooking for added flavor and freshness.
  8. Taste the soup and adjust seasoning as necessary before serving.

Notes

For a thicker soup, add more tomato paste. Adjust seasoning as needed before serving. Fresh herbs elevate the dish, but dried herbs work too.
