Ingredients
- 1½ pounds ground turkey breast
- 1 cup chopped onions
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1½ cups sliced carrots
- 1½ cups sliced celery
- 28-ounce can of diced tomatoes
- 3 cups beef broth
- 4 tablespoons tomato paste
- Fresh or dried herbs (basil, oregano, thyme)
- Pinch of chili pepper flakes
- ¼ cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey, salt, and pepper. Cook until the turkey browns evenly. Stir in onions and garlic. Cook until onions are translucent, about 3-4 minutes.
- Transfer the mixture to a Dutch oven or large pot.
- In the same skillet, sauté sliced carrots and celery until slightly tender, about 5 minutes. Add them to the pot.
- Deglaze the skillet with the canned tomatoes, scraping any browned bits from the bottom. Add extra flavor.
- Pour in beef broth and tomato paste to the pot, along with your choice of herbs. Bring everything to a boil.
- Reduce heat and let the mixture simmer for 30 to 40 minutes, stirring occasionally.
- Stir in fresh parsley in the last 5-10 minutes of cooking for added flavor and freshness.
- Taste the soup and adjust seasoning as necessary before serving.
Notes
For a thicker soup, add more tomato paste. Adjust seasoning as needed before serving. Fresh herbs elevate the dish, but dried herbs work too.
