  • 2 large eggs

  • 1/2 cup (60g) breadcrumbs

  • 1 teaspoon (5 ml) dried Italian herbs
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1 tablespoon (15 ml) vegetable oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the grated zucchini in a clean kitchen towel.
  4. Squeeze out excess moisture from the zucchini.
  5. In a large bowl, combine the squeezed zucchini and eggs.
  6. Add Parmesan cheese, breadcrumbs, and minced garlic to the bowl.
