Ingredients

  • 1 cup (240 ml) shredded zucchini drained well
  • 1 clove garlic grated fine
  • 1/3 cup (80 g) breadcrumbs
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons (30 ml) chopped fresh chives (or 15 ml dried chives)
  • 1 tablespoon (15 ml) chopped fresh parsley (or 7.5 ml dried)
  • 1 teaspoon (5 ml) chopped fresh basil (or 2.5 ml dried)
  • 1 teaspoon (5 ml) chopped fresh oregano (or 2.5 ml dried)
  • pinch of salt and pepper
  • tomato sauce for dipping


Instructions

  1. Set your oven to 400ËšF and prepare a baking tray by lightly greasing it with olive oil or a non-stick spray. Put it aside for later.
  2. Shred the zucchini using a box grater and place it in a clean cloth. Roll up the cloth and twist it to remove excess water.
  3. Using the small side of the box grater, finely grate the garlic.
  4. In a medium-sized bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, chives, parsley, basil, oregano, salt, and pepper. Stir until everything is evenly mixed.
  5. Take a tablespoon of the mixture and form it into small balls using your hands, then arrange them on the prepared baking tray.
  6. Place the tray in the hot oven and bake for 15-18 minutes, or until the bites turn golden brown. Enjoy them warm with tomato sauce for dipping. This recipe yields approximately 16 bites.
