Ingredients
- 1 cup (240 ml) shredded zucchini drained well
- 1 clove garlic grated fine
- 1/3 cup (80 g) breadcrumbs
- 1/4 cup (25 g) grated Parmesan cheese
- 1 large egg
- 2 tablespoons (30 ml) chopped fresh chives (or 15 ml dried chives)
- 1 tablespoon (15 ml) chopped fresh parsley (or 7.5 ml dried)
- 1 teaspoon (5 ml) chopped fresh basil (or 2.5 ml dried)
- 1 teaspoon (5 ml) chopped fresh oregano (or 2.5 ml dried)
- pinch of salt and pepper
- tomato sauce for dipping
Instructions
- Set your oven to 400ËšF and prepare a baking tray by lightly greasing it with olive oil or a non-stick spray. Put it aside for later.
- Shred the zucchini using a box grater and place it in a clean cloth. Roll up the cloth and twist it to remove excess water.
- Using the small side of the box grater, finely grate the garlic.
- In a medium-sized bowl, combine the drained zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, chives, parsley, basil, oregano, salt, and pepper. Stir until everything is evenly mixed.
- Take a tablespoon of the mixture and form it into small balls using your hands, then arrange them on the prepared baking tray.
- Place the tray in the hot oven and bake for 15-18 minutes, or until the bites turn golden brown. Enjoy them warm with tomato sauce for dipping. This recipe yields approximately 16 bites.
