Delightful mini cheesecakes with a creamy New York-style flavor, perfect for sharing at gatherings or enjoying at home.
Ingredients
- 8 oz cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup graham cracker crumbs
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese until smooth.
- Gradually add sugar and vanilla, mixing well.
- Add eggs, one at a time, mixing until combined.
- Stir in sour cream until the mixture is smooth.
- Place mini cupcake liners in a mini muffin tin.
- Add a small amount of graham cracker crumbs to the bottom of each liner.
- Pour the cream cheese mixture over the crumbs, filling each liner about 2/3 full.
- Bake for 15-18 minutes, or until the centers are set.
- Let cool and refrigerate for at least 2 hours before serving.
Notes
For a creamier consistency, slightly reduce the baking time. Garnish with fresh fruit or whipped cream if desired.
