Description

Delightful mini cheesecakes with a creamy New York-style flavor, perfect for sharing at gatherings or enjoying at home.


Ingredients

  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup graham cracker crumbs


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, beat the cream cheese until smooth.
  3. Gradually add sugar and vanilla, mixing well.
  4. Add eggs, one at a time, mixing until combined.
  5. Stir in sour cream until the mixture is smooth.
  6. Place mini cupcake liners in a mini muffin tin.
  7. Add a small amount of graham cracker crumbs to the bottom of each liner.
  8. Pour the cream cheese mixture over the crumbs, filling each liner about 2/3 full.
  9. Bake for 15-18 minutes, or until the centers are set.
  10. Let cool and refrigerate for at least 2 hours before serving.

Notes

For a creamier consistency, slightly reduce the baking time. Garnish with fresh fruit or whipped cream if desired.
