Ingredients

  • Ground beef – 1 lb (450 g)
  • Onion, finely chopped – 1 small
  • Garlic, minced – 3 cloves
  • Fresh cilantro, chopped – 1/4 cup (15 g)
  • Fresh parsley, chopped – 1/4 cup (15 g)
  • Ground cumin – 1 teaspoon (5 g)
  • Ground coriander – 1 teaspoon (5 g)
  • Ground paprika – 1/2 teaspoon (2.5 g)
  • Ground cinnamon – 1/4 teaspoon (1.25 g)
  • Salt – 1 teaspoon (5 g)
  • Black pepper – 1/2 teaspoon (2.5 g)
  • Bread crumbs – 1/4 cup (30 g)
  • Egg – 1 large
  • For the Creamy Garlic Yogurt Sauce:
  • Plain yogurt – 1 cup (240 ml)
  • Garlic, minced – 2 cloves
  • Lemon juice – 1 tablespoon (15 ml)
  • Salt – 1/2 teaspoon (2.5 g)
  • Black pepper – 1/4 teaspoon (1.25 g)
  • Fresh dill, chopped – 1 tablespoon (3 g)


Instructions

  1. In a large bowl, combine ground chicken, finely chopped onion, and minced garlic.
  2. Add fresh cilantro and parsley to the chicken mixture.
  3. Sprinkle in ground cumin, ground coriander, ground paprika, and ground cinnamon.
  4. Season the mixture with salt and black pepper.
  5. Add bread crumbs and crack an egg into the bowl.
  6. Mix all ingredients thoroughly until well combined.
  7. Shape the mixture into small oval-shaped koftas.
  8. Preheat a grill or frying pan over medium heat.
  9. Cook the koftas for about 5-6 minutes on each side until cooked through.
  10. While the koftas cook, prepare the yogurt sauce.
  11. In a separate bowl, combine plain yogurt with minced garlic.
  12. Stir in lemon juice, salt, and black pepper.
  13. Add freshly chopped dill to the yogurt mixture and mix well.
  14. Once the koftas are cooked, remove them from the heat.
