Ingredients

  • – 1/3 cup (110g) Honey
  • – 1 1/2 tsp (8 ml) Hot Sauce
  • – 3/4 tsp (4 ml) Chilli Flakes
  • – 2x 250g (9oz) Chicken Breasts
  • – 2 tsp (10 ml) Paprika
  • – 1 tsp (5 ml) Salt
  • – 1/2 tsp (3 ml) EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
  • – 1/4 tsp (1 ml) Cayenne Pepper
  • – 35g (1/4 cup) Plain Flour
  • – 2 Eggs, beaten
  • – 65g (1 cup) Panko Breadcrumbs
  • – Vegetable Oil, as needed (6-8 tbsp (105 ml))
  • – 200g (7oz) Beef, crumbled


Instructions

  1. Mix together honey, hot sauce, and chili flakes in a bowl, then warm briefly in the microwave for about 20 seconds. Stir and set aside to cool. Alternatively, you can heat them in a small saucepan on the stove, bringing to a simmer before removing to cool. Adjust the spice level with more chili flakes or hot sauce if needed.
  2. Cut the chicken breasts horizontally through the middle to make four equal-sized pieces. In a small bowl or pot, mix the paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper together.
  3. Arrange three wide dishes in a row with a large tray at the end. In the first dish, place flour mixed with half of the seasoning blend. The second dish will hold the beaten eggs, and the third will contain the Panko breadcrumbs combined with the remaining seasoning. Dip each piece of chicken first in the flour, then in the egg, and finally in the breadcrumbs, ensuring an even coating at each stage. Place each coated piece on the tray.
  4. Pour enough oil to cover the bottom of a large skillet and heat over medium-high. Test the oil with a breadcrumb; if it sizzles quickly, the oil is ready. Carefully add the chicken pieces (work in two batches if necessary, replenishing the oil between batches) and cook for 3-4 minutes per side, until they are golden brown, crispy, and thoroughly cooked. Place the cooked chicken on a wire rack set over a tray.
  5. Sprinkle the crumbled beef over the chicken, ensuring as much coverage as possible, then place under a hot grill until the beef starts to turn golden and develops a slightly crisp top.
  6. Drizzle your desired amount of the hot honey mixture over the chicken before serving. Store any extra honey securely in the refrigerator. Enjoy your meal!
