Description

A flavorful and comforting hot and sour soup that combines mushrooms, tofu, and bamboo shoots, creating a delightful dish that warms the heart.


Ingredients

  • 1 cup mushrooms, sliced
  • 1 cup tofu, cubed
  • 1/2 cup bamboo shoots, sliced
  • 4 cups vegetable broth
  • 2 eggs, beaten
  • 2 tablespoons vinegar
  • 1 teaspoon white pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch (optional for thickening)
  • Salt to taste
  • Chopped green onions for garnish


Instructions

  1. Bring the vegetable broth to a boil in a pot.
  2. Add the sliced mushrooms, tofu, and bamboo shoots.
  3. Reduce heat and let simmer for about 5-10 minutes.
  4. Stir in vinegar and soy sauce.
  5. Slowly drizzle the beaten eggs into the soup while stirring to create silky egg ribbons.
  6. If using, mix the cornstarch with a little water to create a slurry and add it to the soup to thicken.
  7. Season with white pepper and salt to taste.
  8. Serve hot, garnished with chopped green onions.

Notes
