- 8 cups chicken or vegetable broth
- 1 cup sliced mushrooms
- 1 cup cubed tofu
- 1/2 cup sliced bamboo shoots
- 1/2 cup white vinegar
- 1/4 cup soy sauce
- 1 tablespoon cornstarch
- 2 beaten eggs
- 2 chopped green onions
- 1 teaspoon black pepper
- 1 teaspoon sesame oil
- Cilantro for garnish
Instructions
- In a large pot, bring the broth to a simmer.
- Add mushrooms, tofu, and bamboo shoots.
- Stir in the vinegar, soy sauce, black pepper, and sesame oil.
- Mix cornstarch with a little water and add it to the soup to thicken.
- Slowly drizzle in the beaten eggs while stirring the soup.
- Add green onions and cook for an additional 2 minutes.
