Ingredients

  • Beef tenderloin, boneless and skinless, 4 pieces (about 680 grams)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (about 1 gram)
  • Vegetable oil, 2 tablespoons (30 ml) (30 milliliters)
  • Garlic powder, 1 teaspoon (5 ml) (5 grams)
  • Honey, 1/4 cup (60 ml) (85 grams)
  • Brown mustard, 1/4 cup (60 ml) (60 grams)
  • Broccoli florets, 4 cups (960 ml) (about 600 grams)
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Onion powder, 1/2 teaspoon (3 ml) (about 1.5 grams)
  • Paprika, 1/2 teaspoon (3 ml) (about 1 gram)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, black pepper, garlic powder, and onion powder.
  3. In a small bowl, mix honey and Dijon mustard until well combined.
  4. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  5. Add chicken breasts to the skillet and sear for 2-3 minutes per side until golden brown.
  6. Remove the skillet from heat and pour the honey mustard mixture over the chicken.
  7. Toss the broccoli florets with the remaining olive oil, lemon juice, salt, and paprika in a large bowl.
  8. Arrange the broccoli around the chicken in the skillet.
  9. Transfer the skillet to the preheated oven.
  10. Roast for 20-25 minutes, until the chicken is cooked through and broccoli is tender.
  11. Remove from oven and let rest for a few minutes before serving.
  12. Serve the chicken with the roasted broccoli on the side.
