Ingredients
- Beef tenderloin, boneless and skinless, 4 pieces (about 680 grams)
- Salt, 1 teaspoon (5 ml) (5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (about 1 gram)
- Vegetable oil, 2 tablespoons (30 ml) (30 milliliters)
- Garlic powder, 1 teaspoon (5 ml) (5 grams)
- Honey, 1/4 cup (60 ml) (85 grams)
- Brown mustard, 1/4 cup (60 ml) (60 grams)
- Broccoli florets, 4 cups (960 ml) (about 600 grams)
- Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
- Onion powder, 1/2 teaspoon (3 ml) (about 1.5 grams)
- Paprika, 1/2 teaspoon (3 ml) (about 1 gram)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt, black pepper, garlic powder, and onion powder.
- In a small bowl, mix honey and Dijon mustard until well combined.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Add chicken breasts to the skillet and sear for 2-3 minutes per side until golden brown.
- Remove the skillet from heat and pour the honey mustard mixture over the chicken.
- Toss the broccoli florets with the remaining olive oil, lemon juice, salt, and paprika in a large bowl.
- Arrange the broccoli around the chicken in the skillet.
- Transfer the skillet to the preheated oven.
- Roast for 20-25 minutes, until the chicken is cooked through and broccoli is tender.
- Remove from oven and let rest for a few minutes before serving.
- Serve the chicken with the roasted broccoli on the side.
Notes
- Marinate chicken in honey mustard mixture for at least 30 minutes before cooking.
- Pat chicken dry before seasoning for a nice sear.
