Ingredients

  • 4 medium sweet potatoes (about 2 pounds) (900 g)
  • 1 pound beef sausages (450 g)
  • 2 tablespoons vegetable oil (30 ml)
  • 1/4 cup honey (60 ml)
  • 4 cloves garlic, minced
  • 1 teaspoon soy sauce (5 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 teaspoon dried thyme (1 g)
  • 1/4 teaspoon red pepper flakes (optional) (0.5 g)
  • 2 tablespoons chopped fresh parsley for garnish (optional) (8 g)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1-inch pieces.
  3. In a large bowl, toss the sweet potatoes with 1 tablespoon of olive oil, salt, black pepper, and dried thyme.
  4. Spread the sweet potatoes evenly on a baking sheet.
  5. Bake the sweet potatoes in the oven for 25-30 minutes or until tender.
  6. While the sweet potatoes bake, slice the sausages into 1-inch pieces.
  7. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  8. Add the sausage pieces to the skillet and cook until browned on all sides, about 6-8 minutes.
  9. In a small bowl, mix together honey, minced garlic, soy sauce, and red pepper flakes (if using).
  10. Pour the honey garlic sauce over the sausages in the skillet.
  11. Stir well to coat the sausages and cook for another 2-3 minutes until the sauce thickens.
  12. Remove the sweet potatoes from the oven and add them to the skillet with the sausages.
  13. Gently toss everything to combine and heat through for 1-2 minutes.
  14. Transfer the dish to a serving platter.
  15. Garnish with chopped fresh parsley if desired.
