Ingredients
- 4 medium sweet potatoes (about 2 pounds) (900 g)
- 1 pound beef sausages (450 g)
- 2 tablespoons vegetable oil (30 ml)
- 1/4 cup honey (60 ml)
- 4 cloves garlic, minced
- 1 teaspoon soy sauce (5 ml)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 teaspoon dried thyme (1 g)
- 1/4 teaspoon red pepper flakes (optional) (0.5 g)
- 2 tablespoons chopped fresh parsley for garnish (optional) (8 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes into 1-inch pieces.
- In a large bowl, toss the sweet potatoes with 1 tablespoon of olive oil, salt, black pepper, and dried thyme.
- Spread the sweet potatoes evenly on a baking sheet.
- Bake the sweet potatoes in the oven for 25-30 minutes or until tender.
- While the sweet potatoes bake, slice the sausages into 1-inch pieces.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the sausage pieces to the skillet and cook until browned on all sides, about 6-8 minutes.
- In a small bowl, mix together honey, minced garlic, soy sauce, and red pepper flakes (if using).
- Pour the honey garlic sauce over the sausages in the skillet.
- Stir well to coat the sausages and cook for another 2-3 minutes until the sauce thickens.
- Remove the sweet potatoes from the oven and add them to the skillet with the sausages.
- Gently toss everything to combine and heat through for 1-2 minutes.
- Transfer the dish to a serving platter.
- Garnish with chopped fresh parsley if desired.
- Serve immediately.
