Ingredients
- 1 1/2 pounds (680 g) boneless, skinless chicken thighs
- 2 tablespoons olive oil (30 ml)
- 4 large carrots, sliced
- 4 cloves garlic, minced
- 1/4 cup honey (60 ml)
- 2 tablespoons soy sauce (30 ml)
- 2 tablespoons apple cider vinegar (30 ml)
- 1 teaspoon ground black pepper (5 g)
- 1/2 teaspoon salt (3 g)
- 1 teaspoon dried thyme (1 g)
- 1 teaspoon paprika (2 g)
- 2 tablespoons chopped fresh parsley (8 g)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season chicken thighs with salt, pepper, thyme, and paprika.
- Add chicken thighs to the skillet and cook for 5-6 minutes on each side until browned.
- Remove chicken from the skillet and set aside.
- Add remaining 1 tablespoon of olive oil to the skillet.
- Add sliced carrots and cook for 5 minutes until slightly tender.
- Add minced garlic to the carrots and sauté for 1 minute.
- In a small bowl, mix honey, soy sauce, and apple cider vinegar.
- Pour honey mixture over carrots and stir to coat.
- Return chicken thighs to the skillet, placing them on top of the carrots.
- Cover the skillet and simmer for 10-12 minutes until chicken is cooked through.
- Remove from heat and sprinkle with chopped fresh parsley.
- Serve hot.

- Marinate chicken thighs in honey, soy sauce, and apple cider vinegar for 30 minutes before cooking for added flavor.
