Ingredients

  • 1 1/2 pounds (680 g) boneless, skinless chicken thighs
  • 2 tablespoons olive oil (30 ml)
  • 4 large carrots, sliced
  • 4 cloves garlic, minced
  • 1/4 cup honey (60 ml)
  • 2 tablespoons soy sauce (30 ml)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 teaspoon ground black pepper (5 g)
  • 1/2 teaspoon salt (3 g)
  • 1 teaspoon dried thyme (1 g)
  • 1 teaspoon paprika (2 g)
  • 2 tablespoons chopped fresh parsley (8 g)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt, pepper, thyme, and paprika.
  3. Add chicken thighs to the skillet and cook for 5-6 minutes on each side until browned.
  4. Remove chicken from the skillet and set aside.
  5. Add remaining 1 tablespoon of olive oil to the skillet.
  6. Add sliced carrots and cook for 5 minutes until slightly tender.
  7. Add minced garlic to the carrots and sauté for 1 minute.
  8. In a small bowl, mix honey, soy sauce, and apple cider vinegar.
  9. Pour honey mixture over carrots and stir to coat.
  10. Return chicken thighs to the skillet, placing them on top of the carrots.
  11. Cover the skillet and simmer for 10-12 minutes until chicken is cooked through.
  12. Remove from heat and sprinkle with chopped fresh parsley.
  13. Serve hot.

  • Marinate chicken thighs in honey, soy sauce, and apple cider vinegar for 30 minutes before cooking for added flavor.
