Description

A delicious and vibrant homemade Mexican pizza combining crunchy tortillas, creamy refried beans, and zesty toppings, perfect for family gatherings.


Ingredients

  • 1 lb lean ground beef (or turkey/plant-based)
  • 1 packet (1 oz) taco seasoning (or 2 Tbsp homemade)
  • ½ cup water
  • 6 medium flour tortillas (lightly toasted)
  • 1 can (16 oz) refried beans (heated)
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato (diced)
  • 1 green onion (diced)
  • 1 small can sliced black olives
  • Sour cream
  • Guacamole
  • Shredded lettuce
  • Diced avocado
  • Hot sauce
  • Crushed tortilla chips


Instructions

  1. Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
  2. Add taco seasoning and water to the pan, and let it simmer for about 5 minutes.
  3. Warm the refried beans in a separate pot.
  4. Toast the tortillas lightly in a skillet or oven for 3–5 minutes.
  5. Lay out 3 tortillas on a baking sheet. Spread refried beans on each, then top with the seasoned meat mixture.
  6. Place one additional tortilla on top of each stack.
  7. Spoon enchilada sauce over the stacks.
  8. Sprinkle cheese on top and add diced tomatoes, green onions, and black olives.
  9. Bake at 400°F for 10–12 minutes, or until cheese is melted.
  10. Remove from oven, let cool for 2–3 minutes, slice into wedges, and serve warm.

Notes

For a spicier flavor, add diced chilies or jalapeños. Experiment with additional toppings like corn or black beans for variety.
