A delicious and vibrant homemade Mexican pizza combining crunchy tortillas, creamy refried beans, and zesty toppings, perfect for family gatherings.
Ingredients
- 1 lb lean ground beef (or turkey/plant-based)
- 1 packet (1 oz) taco seasoning (or 2 Tbsp homemade)
- ½ cup water
- 6 medium flour tortillas (lightly toasted)
- 1 can (16 oz) refried beans (heated)
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato (diced)
- 1 green onion (diced)
- 1 small can sliced black olives
- Sour cream
- Guacamole
- Shredded lettuce
- Diced avocado
- Hot sauce
- Crushed tortilla chips
Instructions
- Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
- Add taco seasoning and water to the pan, and let it simmer for about 5 minutes.
- Warm the refried beans in a separate pot.
- Toast the tortillas lightly in a skillet or oven for 3–5 minutes.
- Lay out 3 tortillas on a baking sheet. Spread refried beans on each, then top with the seasoned meat mixture.
- Place one additional tortilla on top of each stack.
- Spoon enchilada sauce over the stacks.
- Sprinkle cheese on top and add diced tomatoes, green onions, and black olives.
- Bake at 400°F for 10–12 minutes, or until cheese is melted.
- Remove from oven, let cool for 2–3 minutes, slice into wedges, and serve warm.
Notes
For a spicier flavor, add diced chilies or jalapeños. Experiment with additional toppings like corn or black beans for variety.
