Description

Indulge in these delicious homemade healthy peanut butter eggs, combining creamy peanut butter and chocolate for a guilt-free treat.


Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 tablespoon coconut oil


Instructions

  1. Combine the peanut butter, coconut flour, and maple syrup in a medium-sized mixing bowl. Stir until smooth.
  2. Form the mixture into egg shapes by rolling 1-inch balls and flattening them into ovals.
  3. Place the ovals on parchment paper on a cookie sheet and freeze for 30 minutes.
  4. Heat the chocolate chips and coconut oil in a small bowl using the microwave, microwaving for 30 seconds at a time and stirring until melted.
  5. Coat the peanut butter eggs in the melted chocolate using two forks and allow excess chocolate to drip off.
  6. Transfer each egg back to the parchment paper to harden.
  7. Refrigerate the eggs until ready to enjoy.
