Description

Homemade chocolate turtles are a decadent treat combining rich chocolate, sweet caramel, and crunchy pecans.


Ingredients

  • 6 tbsp salted butter
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup sweetened condensed milk
  • ½ cup light corn syrup
  • ½ tsp vanilla extract
  • 2 cups pecan halves, toasted and chopped
  • 16 oz almond bark or high-quality chocolate


Instructions

  1. Preheat your oven to 350°F (175°C). Spread the pecans evenly across a baking sheet and toast for 5–10 minutes, stirring once.
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Melt the butter in a large microwave-safe bowl, then add the brown sugar, granulated sugar, sweetened condensed milk, and corn syrup; stir to combine.
  4. Microwave the mixture on HIGH for 6–8 minutes, stirring occasionally. Once it reaches 235°F (soft-ball stage), remove from microwave.
  5. Stir in the vanilla extract and chopped pecans.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Refrigerate for 20 minutes or until set firm.
  8. Melt the chocolate in a microwave or double boiler, then dip each caramel-pecan mound in the chocolate, letting excess drip off.
  9. Place the dipped turtles back on the prepared baking sheet to set.

Notes

Consider drizzling additional chocolate on top or sprinkling sea salt for extra flavor.
