Description
Homemade chocolate turtles are a decadent treat combining rich chocolate, sweet caramel, and crunchy pecans.
Ingredients
- 6 tbsp salted butter
- ½ cup light brown sugar, packed
- ½ cup granulated sugar
- ½ cup sweetened condensed milk
- ½ cup light corn syrup
- ½ tsp vanilla extract
- 2 cups pecan halves, toasted and chopped
- 16 oz almond bark or high-quality chocolate
Instructions
- Preheat your oven to 350°F (175°C). Spread the pecans evenly across a baking sheet and toast for 5–10 minutes, stirring once.
- Line a baking sheet with parchment paper or a silicone mat.
- Melt the butter in a large microwave-safe bowl, then add the brown sugar, granulated sugar, sweetened condensed milk, and corn syrup; stir to combine.
- Microwave the mixture on HIGH for 6–8 minutes, stirring occasionally. Once it reaches 235°F (soft-ball stage), remove from microwave.
- Stir in the vanilla extract and chopped pecans.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Refrigerate for 20 minutes or until set firm.
- Melt the chocolate in a microwave or double boiler, then dip each caramel-pecan mound in the chocolate, letting excess drip off.
- Place the dipped turtles back on the prepared baking sheet to set.
Notes
Consider drizzling additional chocolate on top or sprinkling sea salt for extra flavor.
