Description

A delicious high protein bake that combines cottage cheese and mixed berries, perfect for breakfast or any time of day.


Ingredients

  • 2 cups full-fat cottage cheese
  • 3 large eggs
  • ½ cup almond flour
  • ¼ cup honey or maple syrup (or sugar-free alternative)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 2 cups mixed berries (fresh or frozen)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Blend the cottage cheese and eggs until smooth and creamy.
  3. Transfer the mixture to a bowl and fold in almond flour, sweetener, vanilla extract, lemon zest, and baking powder.
  4. Gently fold in mixed berries.
  5. Pour the batter into the greased baking dish and spread evenly.
  6. Bake for 35–40 minutes, or until golden brown and set.
  7. Cool for 20–30 minutes before slicing into squares.

Notes

Serve with Greek yogurt or extra berries for added flavor. Store leftovers in an airtight container in the fridge for up to five days.
