Ingredients
- 2 pounds (907 g) beef stew meat (900 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 4 tablespoons (60 ml) unsalted butter (60 grams)
- 5 cloves garlic, minced
- 1 teaspoon (5 ml) salt (5 grams)
- 1/2 teaspoon (3 ml) black pepper (2 grams)
- 1 teaspoon (5 ml) onion powder (2 grams)
- 1 teaspoon (5 ml) smoked paprika (2 grams)
- 1 tablespoon (15 ml) Worcestershire sauce (15 milliliters)
- 1 cup (240 ml) beef broth (240 milliliters)
- 2 tablespoons (30 ml) cornstarch (16 grams)
- 2 tablespoons (30 ml) water (30 milliliters)
- Chopped fresh parsley for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the beef stew meat to the skillet in batches to avoid overcrowding.
- Sear the beef until browned on all sides, about 5 minutes per batch.
- Transfer the seared beef to the slow cooker.
- In the same skillet, reduce heat to medium and add 4 tablespoons of butter.
- Once the butter melts, add 5 cloves of minced garlic to the skillet.
- Sauté the garlic for about 1 minute until fragrant.
- Pour the garlic butter over the beef in the slow cooker.
- Sprinkle 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of onion powder, and 1 teaspoon of smoked paprika over the beef.
- Add 1 tablespoon of Worcestershire sauce and 1 cup of beef broth to the slow cooker.
- Stir to combine the ingredients.
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry.
- About 30 minutes before serving, stir the cornstarch slurry into the slow cooker.
- Cover and continue cooking until the sauce thickens.
- Once done, taste and adjust seasoning if necessary.
- Garnish with chopped fresh parsley before serving.
