Description

Ingredients

  • 2 pounds (907 g) (900 grams) beef chuck roast, cut into 1-inch cubes
  • 4 tablespoons (60 ml) (56 grams) unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) dried rosemary
  • 1 cup (240 ml) (240 milliliters) beef broth
  • 2 tablespoons (30 ml) (30 milliliters) soy sauce
  • 1 tablespoon (15 ml) (15 milliliters) Worcestershire sauce
  • 2 tablespoons (30 ml) (30 milliliters) olive oil
  • 1 tablespoon (15 ml) (8 grams) cornstarch
  • 2 tablespoons (30 ml) (30 milliliters) water


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add beef cubes to the skillet in batches, searing each side until browned.
  3. Transfer the seared beef cubes to the slow cooker.
  4. In the same skillet, melt the butter over medium heat.
  5. Add minced garlic to the butter and sauté until fragrant, about 1 minute.
  6. Pour the garlic butter over the beef cubes in the slow cooker.
  7. Add salt, black pepper, thyme, and rosemary to the slow cooker.
  8. Pour beef broth, soy sauce, and Worcestershire sauce over the beef.
  9. Stir the mixture gently to combine all ingredients in the slow cooker.
  10. Cover the slow cooker with a lid and set to cook on low for 6-8 hours or on high for 3-4 hours.
  11. About 30 minutes before serving, mix cornstarch with water in a small bowl until smooth.
  12. Stir the cornstarch mixture into the slow cooker to thicken the sauce.
  13. Cover and cook for an additional 30 minutes on high.
  14. Once done, taste and adjust seasoning if necessary.
  15. Serve the garlic butter beef bites hot, garnished with fresh herbs if desired.
