Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 2 cups blueberries
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cottage cheese, rolled oats, blueberries, honey (or maple syrup), lemon juice, lemon zest, baking powder, salt, and eggs in a large mixing bowl.
  3. Stir until well mixed to ensure all ingredients combine evenly.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 25-30 minutes or until set and lightly golden on top.
