Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 2 cups blueberries
- 1/4 cup honey or maple syrup
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cottage cheese, rolled oats, blueberries, honey (or maple syrup), lemon juice, lemon zest, baking powder, salt, and eggs in a large mixing bowl.
- Stir until well mixed to ensure all ingredients combine evenly.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes or until set and lightly golden on top.
- Allow to cool slightly before cutting into squares.
- Serve warm or at room temperature.
Notes
Use fresh blueberries for best flavor. If using frozen blueberries, no need to thaw them before mixing.
