Description

A hearty and creamy taco soup packed with lean protein, flavors, and warmth, perfect for a family dinner.


Ingredients

  • 1 lb lean ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 can green chilies (optional)
  • 1 can black beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lean ground turkey or chicken and cook until browned, about 5-7 minutes.
  2. Stir in the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper, coating the meat evenly.
  3. Add the diced tomatoes and green chilies (if using), then stir in the black beans and chicken broth.
  4. Bring to a simmer, then add the cream cheese, stirring until melted and combined.
  5. Finally, add the shredded cheddar cheese, stirring until melted. Taste and adjust seasoning if necessary.

Notes

For added heat, consider using a spicier taco seasoning or diced jalapeños. Leftovers can be frozen for future meals.
