A hearty and creamy taco soup packed with lean protein, flavors, and warmth, perfect for a family dinner.
Ingredients
- 1 lb lean ground turkey or chicken
- 1 tablespoon olive oil
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 can green chilies (optional)
- 1 can black beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lean ground turkey or chicken and cook until browned, about 5-7 minutes.
- Stir in the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper, coating the meat evenly.
- Add the diced tomatoes and green chilies (if using), then stir in the black beans and chicken broth.
- Bring to a simmer, then add the cream cheese, stirring until melted and combined.
- Finally, add the shredded cheddar cheese, stirring until melted. Taste and adjust seasoning if necessary.
Notes
For added heat, consider using a spicier taco seasoning or diced jalapeños. Leftovers can be frozen for future meals.
