Ingredients
- 4 lb (1.8 kg) turkey breast
- 4 tbsp (60 ml) vegetable oil
- 1 lb (450 g) fresh green beans
- 2 zucchini
- 6 cloves garlic
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) dried oregano
- 1 tbsp (15 ml) dried thyme
- 1 tsp (5 ml) salt
- 1/2 tsp (3 ml) black pepper
Instructions
- Set your oven to 375°F. Wash the turkey breast and dry it with paper towels. Place the turkey in a roasting pan and coat it thoroughly with oregano, thyme, salt, and pepper.
- Put the turkey in the oven you’ve preheated and cook for 1 to 1.5 hours, or until it reaches an internal temperature of 165°F. Let it rest for 10 minutes before you cut it.
- During the turkey’s cooking time, remove the ends from the green beans and spiralize or julienne the zucchini into long, thin strips. Chop the garlic finely.
- In a large pan, heat 4 tablespoons of vegetable oil over medium heat. Add the chopped garlic and cook for 1 minute until it releases its aroma. Toss in the green beans and zucchini strips, and cook for 5-7 minutes, stirring often, until they soften. Add salt and pepper to your liking.
- Slice the turkey breast and present it with the garlic-infused green beans and zucchini. Enjoy your meal!
