Ingredients

  • 4 lb (1.8 kg) turkey breast
  • 4 tbsp (60 ml) vegetable oil
  • 1 lb (450 g) fresh green beans
  • 2 zucchini
  • 6 cloves garlic
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 ml) dried oregano
  • 1 tbsp (15 ml) dried thyme
  • 1 tsp (5 ml) salt
  • 1/2 tsp (3 ml) black pepper


Instructions

  1. Set your oven to 375°F. Wash the turkey breast and dry it with paper towels. Place the turkey in a roasting pan and coat it thoroughly with oregano, thyme, salt, and pepper.
  2. Put the turkey in the oven you’ve preheated and cook for 1 to 1.5 hours, or until it reaches an internal temperature of 165°F. Let it rest for 10 minutes before you cut it.
  3. During the turkey’s cooking time, remove the ends from the green beans and spiralize or julienne the zucchini into long, thin strips. Chop the garlic finely.
  4. In a large pan, heat 4 tablespoons of vegetable oil over medium heat. Add the chopped garlic and cook for 1 minute until it releases its aroma. Toss in the green beans and zucchini strips, and cook for 5-7 minutes, stirring often, until they soften. Add salt and pepper to your liking.
