Ingredients

  • 5 oz (140 g) Wild Salmon Fillet
  • 150 g Sweet Potato
  • 1 tsp (5 ml) Olive Oil
  • 2 sprigs Fresh Rosemary
  • 1 tbsp (15 ml) Lemon Juice
  • 5 tsp (3 ml) Garlic Powder
  • Salt and Pepper to taste


Instructions

  1. Set your oven to 400°F (200°C) to warm up.
  2. Wash the wild salmon fillet and dry it using a paper towel, then lay it on a baking sheet with a light coat of grease.
  3. Pour olive oil over the fish and spread it gently over the top. Season with garlic powder, salt, and pepper.
  4. Place a couple of rosemary sprigs on the salmon and add a splash of lemon juice for extra flavor.
  5. Cook the salmon in the heated oven for 12-15 minutes until it is opaque and flakes apart easily with a fork.
  6. Meanwhile, peel and chop the sweet potato into cubes. Cook them in a pot of lightly salted boiling water until tender, around 10-12 minutes.
  7. Remove the sweet potato from the water and mash it using a fork or masher, seasoning with a bit of salt and pepper.
