- 1 whole fresh pineapple, sliced into rings
- 2 cups vegetable oil (canola or coconut oil)
- 1 tablespoon additional cinnamon and sugar
Instructions
- Combine flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl and whisk until well-blended.
- Add the egg and milk to the dry ingredients, mixing until a smooth batter forms.
- Dredge each pineapple slice in the batter to coat thoroughly.
- Heat vegetable oil in a pan or deep fryer until shimmering.
- Fry each battered pineapple slice for 2 to 3 minutes, turning to ensure even cooking, until golden brown.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
