  • 1 whole fresh pineapple, sliced into rings
  • 2 cups vegetable oil (canola or coconut oil)
  • 1 tablespoon additional cinnamon and sugar


Instructions

  1. Combine flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl and whisk until well-blended.
  2. Add the egg and milk to the dry ingredients, mixing until a smooth batter forms.
  3. Dredge each pineapple slice in the batter to coat thoroughly.
  4. Heat vegetable oil in a pan or deep fryer until shimmering.
  5. Fry each battered pineapple slice for 2 to 3 minutes, turning to ensure even cooking, until golden brown.
