Vibrant veggie rolls filled with fresh vegetables and served with a creamy peanut sauce, perfect for lunch, dinner, or a healthy snack.
Ingredients
- 8 rice paper wrappers
- 1/2 cup shredded red cabbage
- 1 carrot, julienned
- 1 cucumber, julienned
- 1/2 avocado, sliced
- Fresh mint leaves
- Fresh cilantro leaves
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp maple syrup
Instructions
- Prepare all the ingredients: shred the cabbage, julienne the carrot and cucumber, and slice the avocado.
- Dip the rice paper wrappers in warm water to soften them for about 15 to 20 seconds.
- Lay the softened wrapper on a flat surface and assemble by layering red cabbage, carrot, cucumber, avocado, and fresh herbs.
- Wrap the rice paper tightly around the fillings, tucking in the sides as you roll.
- For the peanut sauce, whisk together peanut butter, soy sauce, lime juice, and maple syrup in a bowl until smooth.
- Serve the veggie rolls on a plate alongside the peanut sauce for dipping.
Notes
For added crunch, chill the filling ingredients beforehand. Consider using different vegetables or adding noodles for a heartier version.
