Ingredients
- 1 pound (454 g) beef sausage
- 3/4 cup (180 ml) yellow onion, chopped
- 3/4 cup (180 ml) carrots, diced
- 3/4 cup (180 ml) celery, sliced
- 1 tablespoon (15 ml) garlic, minced
- 1 teaspoon (5 ml) dried basil
- 1 teaspoon (5 ml) dried parsley
- 3/4 teaspoon (4 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 4 cups (960 ml) potatoes, peeled and diced
- 4 cups (960 ml) beef broth
- 1 1/2 cups (360 ml) milk
- 3 tablespoons (45 ml) cornstarch
- 1 1/2 cups (180 g) cheddar cheese, shredded
Instructions
- In a large pot, heat over medium-high and cook the sausage until browned, about 2-3 minutes.
- Add the chopped onions, diced carrots, and sliced celery. Continue cooking while stirring until the onions become translucent, roughly 2-3 minutes more.
- Stir in the minced garlic, dried basil, dried parsley, salt, and black pepper until well mixed.
- Incorporate the diced potatoes and pour in the beef broth. Allow the mixture to reach a boil, then cover with a lid. Let it simmer on medium heat, stirring occasionally, for about 10-12 minutes or until the potatoes are soft.
- In a separate bowl, mix the milk with the cornstarch. Gradually add this mixture to the pot, stirring as you do so. Bring the soup back to a gentle boil and keep stirring until it thickens.
- Turn off the heat and mix in the shredded cheddar cheese until it is fully melted and blended.
- Maintain the soup’s warmth over very low heat, stirring now and then to prevent the cheese and milk from scorching.
