  • 1 pound (454 g) beef sausage
  • 3/4 cup (180 ml) yellow onion, chopped
  • 3/4 cup (180 ml) carrots, diced
  • 3/4 cup (180 ml) celery, sliced
  • 1 tablespoon (15 ml) garlic, minced
  • 1 teaspoon (5 ml) dried basil
  • 1 teaspoon (5 ml) dried parsley
  • 3/4 teaspoon (4 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 4 cups (960 ml) potatoes, peeled and diced
  • 4 cups (960 ml) beef broth
  • 1 1/2 cups (360 ml) milk
  • 3 tablespoons (45 ml) cornstarch
  • 1 1/2 cups (180 g) cheddar cheese, shredded


Instructions

  1. In a large pot, heat over medium-high and cook the sausage until browned, about 2-3 minutes.
  2. Add the chopped onions, diced carrots, and sliced celery. Continue cooking while stirring until the onions become translucent, roughly 2-3 minutes more.
  3. Stir in the minced garlic, dried basil, dried parsley, salt, and black pepper until well mixed.
  4. Incorporate the diced potatoes and pour in the beef broth. Allow the mixture to reach a boil, then cover with a lid. Let it simmer on medium heat, stirring occasionally, for about 10-12 minutes or until the potatoes are soft.
  5. In a separate bowl, mix the milk with the cornstarch. Gradually add this mixture to the pot, stirring as you do so. Bring the soup back to a gentle boil and keep stirring until it thickens.
  6. Turn off the heat and mix in the shredded cheddar cheese until it is fully melted and blended.
  7. Maintain the soup’s warmth over very low heat, stirring now and then to prevent the cheese and milk from scorching.
