Description

A comforting slow-cooked beef Manhattan that evokes cherished family memories through its tender beef and rich gravy served over creamy mashed potatoes.


Ingredients

  • 2 lbs beef chuck roast, trimmed
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 packet brown gravy mix (about 1 oz)
  • 1 tablespoon Worcestershire sauce
  • 3 cups mashed potatoes, prepared
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)


Instructions

  1. Season the beef chuck roast with salt, black pepper, and garlic powder.
  2. Place sliced onions at the bottom of the slow cooker. Lay the beef roast on top of the onions.
  3. In a bowl, whisk together beef broth, brown gravy mix, and Worcestershire sauce. Pour this mixture over the beef and onions.
  4. Cover the slow cooker and set it to low heat. Cook for about 480 minutes (8 hours) until the beef is fork-tender.
  5. If a thicker gravy is desired, remove the beef, whisk in a cornstarch slurry, and return the beef to the gravy.
  6. Serve with mashed potatoes topped with shredded beef and rich gravy.
