Ingredients
- 2 lbs beef chuck roast, trimmed
- 1 large onion, sliced
- 2 cups beef broth
- 1 packet brown gravy mix (about 1 oz)
- 1 tablespoon Worcestershire sauce
- 3 cups mashed potatoes, prepared
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- Season the beef chuck roast with salt, black pepper, and garlic powder.
- Place sliced onions at the bottom of the slow cooker. Lay the beef roast on top of the onions.
- In a bowl, whisk together beef broth, brown gravy mix, and Worcestershire sauce. Pour this mixture over the beef and onions.
- Cover the slow cooker and set it to low heat. Cook for about 480 minutes (8 hours) until the beef is fork-tender.
- If a thicker gravy is desired, remove the beef, whisk in a cornstarch slurry, and return the beef to the gravy.
- Serve with mashed potatoes topped with shredded beef and rich gravy.
