Ingredients
- 1 cup (150g) cremini mushrooms, finely chopped
- 1 cup (140g) cooked quinoa
- 1/2 cup (70g) walnuts, finely chopped
- 1/2 cup (50g) breadcrumbs
- 1/4 cup (30g) nutritional yeast
- 2 tablespoons (15g) ground flaxseeds
- 6 tablespoons (90ml) water
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon (15ml) soy sauce
- 1 teaspoon (5ml) balsamic vinegar
- 1 teaspoon (2g) dried oregano
- 1 teaspoon (2g) dried thyme
- 1/2 teaspoon (2g) salt
- 1/4 teaspoon (1g) black pepper
- 2 tablespoons (30ml) olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix the ground flaxseeds with water and let sit for 5 minutes to thicken.
- Heat 1 tablespoon of olive oil in a pan over medium heat.
- Add the diced onion and minced garlic to the pan and sauté until the onion is translucent.
- Add the finely chopped cremini mushrooms to the pan and cook until softened, about 5 minutes.
- Stir in the soy sauce, balsamic vinegar, dried oregano, dried thyme, salt, and black pepper.
- Remove the mushroom mixture from heat and let it cool slightly.
- In a large bowl, combine the cooked quinoa, finely chopped walnuts, breadcrumbs, and nutritional yeast.
- Add the cooled mushroom mixture and the flaxseed mixture to the bowl.
- Mix everything well until all ingredients are fully combined.
- Shape the mixture into small balls, about 1 inch in diameter.
- Place the mushroom meatballs on a baking sheet lined with parchment paper.
- Brush the remaining tablespoon of olive oil over the meatballs to coat them lightly.
- Bake in the oven for 25-30 minutes, or until firm and golden brown.
- Allow the meatballs to cool slightly before serving.
