Ingredients
- 1 spaghetti squash, halved and seeded
- 3 tablespoon (45 ml) s vegetable oil
- 1 small yellow onion, thinly sliced
- 1 teaspoon (5 ml) red pepper flakes
- 25 teaspoon (1 ml) garlic powder
- Salt and freshly ground black pepper to taste
- 75 cup (180 ml) fat-free sour cream
- 1 cup (240 ml) shredded light Cheddar cheese
- Cooking spray
Instructions
- Place the halved and seeded spaghetti squash in a dish with a lid, adding a quarter-inch of water. Microwave for about 10 to 12 minutes. Use a fork to shred the squash into strands and place them in a small bowl.
- While the squash is cooking, warm vegetable oil in a medium pan on medium heat. Sauté the sliced onion, red pepper flakes, garlic powder, salt, and pepper until the onion becomes golden brown, which should take 5 to 10 minutes.
- Set the oven to 375 degrees F (190 degrees C) to preheat. Spray a baking dish with cooking spray to prevent sticking.
- Combine the cooked spaghetti squash with the onion mixture, fat-free sour cream, and half of the shredded light Cheddar cheese. Pour this mixture into the greased baking dish and sprinkle the remaining Cheddar cheese on top.
- Bake in the already heated oven for 20 to 25 minutes. For the final 2 to 3 minutes, switch on the broiler to achieve a golden brown crust on the gratin.
