Ingredients

  • 1 spaghetti squash, halved and seeded
  • 3 tablespoon (45 ml) s vegetable oil
  • 1 small yellow onion, thinly sliced
  • 1 teaspoon (5 ml) red pepper flakes
  • 25 teaspoon (1 ml) garlic powder
  • Salt and freshly ground black pepper to taste
  • 75 cup (180 ml) fat-free sour cream
  • 1 cup (240 ml) shredded light Cheddar cheese
  • Cooking spray


Instructions

  1. Place the halved and seeded spaghetti squash in a dish with a lid, adding a quarter-inch of water. Microwave for about 10 to 12 minutes. Use a fork to shred the squash into strands and place them in a small bowl.
  2. While the squash is cooking, warm vegetable oil in a medium pan on medium heat. Sauté the sliced onion, red pepper flakes, garlic powder, salt, and pepper until the onion becomes golden brown, which should take 5 to 10 minutes.
  3. Set the oven to 375 degrees F (190 degrees C) to preheat. Spray a baking dish with cooking spray to prevent sticking.
  4. Combine the cooked spaghetti squash with the onion mixture, fat-free sour cream, and half of the shredded light Cheddar cheese. Pour this mixture into the greased baking dish and sprinkle the remaining Cheddar cheese on top.
  5. Bake in the already heated oven for 20 to 25 minutes. For the final 2 to 3 minutes, switch on the broiler to achieve a golden brown crust on the gratin.
