Ingredients
- – 2 pounds (900g) carrots, about 12 large carrots, scrubbed
- – 4 tablespoons (60ml) Earth Balance (or more to taste)
- – 1/2 cup (120ml) vegetable stock
- – salt and pepper to taste
- – 2 teaspoons (10 ml) garlic powder, optional
Instructions
- Fill a big pot with water and heat until it’s boiling.
- Cut the carrots into uniform pieces, roughly 1 inch in size. Cook them in the boiling water for about 15 to 20 minutes, or until they are tender enough for a knife to slide in and out effortlessly.
- Remove the water, then return the carrots to the pot. Mix in the Earth Balance, vegetable stock, salt, pepper, and garlic powder.
- Use a hand masher to crush the carrots until they are well combined.
- For a smoother consistency, blend the carrots using an immersion blender or a food processor.
- Check the taste to decide if more Earth Balance or salt is needed.
- Serve while warm.
