Description

Learn how to make delicious and nutritious Healthy Smashed Carrots that are packed with flavor and vitamins. Perfect side dish for any meal!


Ingredients

  • – 2 pounds (900g) carrots, about 12 large carrots, scrubbed
  • – 4 tablespoons (60ml) Earth Balance (or more to taste)
  • – 1/2 cup (120ml) vegetable stock
  • – salt and pepper to taste
  • – 2 teaspoons (10 ml) garlic powder, optional


Instructions

  1. Fill a big pot with water and heat until it’s boiling.
  2. Cut the carrots into uniform pieces, roughly 1 inch in size. Cook them in the boiling water for about 15 to 20 minutes, or until they are tender enough for a knife to slide in and out effortlessly.
  3. Remove the water, then return the carrots to the pot. Mix in the Earth Balance, vegetable stock, salt, pepper, and garlic powder.
  4. Use a hand masher to crush the carrots until they are well combined.
  5. For a smoother consistency, blend the carrots using an immersion blender or a food processor.
  6. Check the taste to decide if more Earth Balance or salt is needed.
  7. Serve while warm.
