Description

A simple recipe for delicious and nutritious homemade protein bars, perfect for a snack or post-workout refuel.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter (or any nut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 cup protein powder
  • 1/4 cup dark chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix the rolled oats and protein powder together.
  2. In a microwave-safe bowl, warm the peanut butter and honey or maple syrup until melted, about 30 seconds.
  3. Stir the wet mixture into the dry ingredients until fully combined.
  4. Fold in the chocolate chips and nuts if using.
  5. Line a baking dish with parchment paper, and press the mixture evenly into the dish.
  6. Refrigerate for at least an hour to set.
  7. Cut into bars and enjoy!

Notes

For firmer bars, chill for longer. Adjust moisture by adding more nut butter if bars are crumbly.
