Ingredients
- – 2 pie crusts (homemade or store-bought)
- – 1 pound (454 g) ground beef
- – 2 tablespoons (30 ml) vegetable oil
- – 1 yellow onion, chopped into 1/4-inch pieces
- – 2 celery ribs, sliced thin, about 120 ml (1/2 cup)
- – 1/3 cup (40 g) flour
- – 2 cups (480 ml) beef broth
- – 1 cup (240 ml) milk
- – 1 teaspoon (5 ml) Worcestershire sauce
- – 1/2-1 teaspoon (8 ml) kosher salt, adjust to taste
- – 1/2 teaspoon (3 ml) freshly ground black pepper, adjust to taste
- – 12-16 ounces (340-454 g) frozen mixed peas and carrots, about 720 ml (3 cups)
- – 1 egg, beaten
Instructions
- Set your oven to a temperature of 425°F. Position one of the pie crusts in a deep dish pie pan, pierce it with a fork, and place it aside.
- In a large, deep frying pan on medium-high heat, cook the ground beef, breaking it apart as it cooks. Once done, move the beef to a small bowl.
- Using the same pan, heat the vegetable oil. Add chopped onions and sliced celery, cooking them until they soften, approximately 3 minutes. Dust with flour.
- Gradually pour in the beef broth, stirring continuously until combined. Allow it to cook for a minute or two until it starts to thicken.
- Incorporate the milk, Worcestershire sauce, and season with kosher salt and black pepper. Lower the heat and let it simmer on medium-low until it thickens, which should take around 5 minutes. Taste and modify the seasoning if necessary.
- Combine the cooked ground beef and the frozen peas and carrots with the sauce. Stir to ensure everything is evenly distributed.
- Pour this mixture into the pie crust lining the dish. Cover with the second pie crust, sealing the edges and trimming any excess dough.
- Cut a few slits on the top crust to let steam escape during baking. Optionally, brush the crust with beaten egg for a glossy finish.
- Bake for 35-40 minutes until the filling is hot and bubbling, and the crust takes on a golden hue. If preferred, wrap the edges with foil to prevent them from browning too much.
- Let the pie cool for 10 minutes prior to serving.
