Description

These Healthy Chocolate Energy Date Balls offer a rich, chocolatey flavor while providing an energy boost, making them the perfect snack for busy days.


Ingredients

  • 1 1/2 cups Medjool dates (pitted)
  • 1 cup raw almonds
  • 3 tablespoons cocoa powder (or cacao powder)
  • 1/2 teaspoon pure vanilla extract
  • 2-3 pinches sea salt
  • 2-3 teaspoons water


Instructions

  1. Place dates and almonds in the bowl of a food processor. Process until almonds break down into medium chunks.
  2. Add cocoa powder, vanilla, and sea salt, and process until almonds turn into very small pieces and the mixture becomes thick.
  3. Add one teaspoon of water to the mixture and process again. If still dry, add one or two more teaspoons of water until you can squeeze the mixture with your hands and it holds together.
  4. Scoop the date energy ball dough with a tablespoon and roll it into balls using your hands.
  5. Place the date balls onto a parchment paper-lined baking sheet or cookie sheet.
  6. Place in the fridge for 20 minutes to set before transferring to an airtight container.
  7. Store the airtight container in the refrigerator for 1-2 weeks.

Notes

Soak Medjool dates in warm water if they are dry. Feel free to add nut butter or spices like cinnamon for extra flavor.
