Ingredients

  • 2 boneless, skinless chicken breasts (about 450 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1 teaspoon (5 ml) dried Italian herbs (5 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 tablespoon lemon juice (15 ml)
  • 1 tablespoon (15 ml) chopped fresh parsley (about 4 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels.
  3. Rub the chicken breasts with olive oil.
  4. Season the chicken with garlic powder, onion powder, Italian herbs, salt, and black pepper.
  5. Place the chicken breasts on a baking sheet.
  6. Arrange the sliced zucchini and yellow squash around the chicken.
  7. Drizzle lemon juice over the vegetables.
  8. Season the vegetables with salt and black pepper to taste.
  9. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Remove from the oven and let the chicken rest for 5 minutes.
  11. Sprinkle chopped fresh parsley over the chicken and vegetables.
  12. Serve warm and enjoy.
