Ingredients
- 2 boneless, skinless chicken breasts (about 450 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1 teaspoon (5 ml) onion powder (5 grams)
- 1 teaspoon (5 ml) dried Italian herbs (5 grams)
- Salt, to taste
- Black pepper, to taste
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 tablespoon lemon juice (15 ml)
- 1 tablespoon (15 ml) chopped fresh parsley (about 4 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels.
- Rub the chicken breasts with olive oil.
- Season the chicken with garlic powder, onion powder, Italian herbs, salt, and black pepper.
- Place the chicken breasts on a baking sheet.
- Arrange the sliced zucchini and yellow squash around the chicken.
- Drizzle lemon juice over the vegetables.
- Season the vegetables with salt and black pepper to taste.
- Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes.
- Sprinkle chopped fresh parsley over the chicken and vegetables.
- Serve warm and enjoy.
