A comforting and nourishing banana bread made with ripe bananas, perfect for satisfying cravings without compromising health.
Ingredients
- 4 bananas (about 1 1/3 cups, mashed, or 320 grams)
- 1 large egg
- 1 tablespoon vanilla extract (15 ml)
- 3 tablespoons light brown sugar (38 g)
- 2 tablespoons granulated sugar (25 g)
- 1 teaspoon ground cinnamon (2.6 g)
- 1 teaspoon baking powder (4 g)
- 1 teaspoon baking soda (5 g)
- 1/2 teaspoon salt (2.5 g)
- 1 1/2 cups all-purpose flour (180 g)
- 2 tablespoons unsalted butter, melted (28 g) or substitute with applesauce (30 g)
Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a 9×5 inch loaf pan.
- Mash the bananas well in a mixing bowl, then add the egg, vanilla extract, brown sugar, granulated sugar, and ground cinnamon. Mix until combined.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Fold in the melted butter until smooth.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 35-45 minutes until a toothpick inserted in the center comes out clean.
- Allow the banana bread to cool in the pan for about 5-10 minutes before inverting it onto a wire rack to cool completely.
Notes
For added moisture, you can substitute melted butter with applesauce. Wrap banana bread tightly in plastic wrap for storage, keeping it fresh for up to three days at room temperature.
