Description

This comforting hash brown egg casserole combines eggs, cheese, and breakfast sausage, making it the perfect dish for family gatherings and brunch.

Ingredients

  • 6 large eggs
  • 1 cup whole milk (or 2% milk)
  • 2 cups shredded cheddar cheese
  • 1 (30-ounce) bag thawed frozen shredded hash browns
  • 1 pound of breakfast sausage or crumbled bacon, cooked
  • 1 small onion, finely diced
  • 1 bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for optional garnish)
  • Butter or cooking spray (to grease the baking dish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the cooked breakfast sausage, diced onion, and bell pepper.
  4. Add garlic powder, salt, and black pepper, mixing until incorporated.
  5. Layer the thawed hash browns at the bottom of the prepared dish.
  6. Sprinkle shredded cheddar cheese over the hash browns.
  7. Pour the egg mixture evenly over the cheese layer, ensuring all ingredients are well-distributed.
  8. Bake in the preheated oven for about 45-50 minutes, until set and lightly golden on top.
  9. If desired, sprinkle with chopped fresh parsley before serving.

Notes

For a crispy top, consider broiling the casserole for the last few minutes of cooking. You can also experiment with different types of cheese for varied flavors.
