Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchinis, sliced
  • 1 can diced tomatoes (14.5 ounce (411 g) s or 411 grams)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil (15 ml)
  • 1 cup (240 ml) cooked rice (185 grams)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chopped onion and minced garlic to the skillet.
  4. Sauté the onion and garlic until the onion is translucent.
  5. Add the ground beef to the skillet and cook until browned.
  6. Stir in the oregano, basil, salt, and black pepper.
  7. Add the sliced zucchinis to the skillet and cook for 3-5 minutes.
  8. Pour the can of diced tomatoes into the skillet and stir well.
  9. Let the mixture simmer for 5 minutes.
  10. Stir in the cooked rice until well combined.
  11. Transfer the mixture to a baking dish.
  12. Sprinkle the shredded cheddar cheese evenly over the top.
  13. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
