- 4 cups (960 ml) Grated Zucchini
- 1/2 cup (120 ml) Mozzarella Cheese
- 1/3 cup (80 ml) Vegan Parmesan Cheese
- 1 Egg
- 1 tsp (5 ml) Garlic Powder
- 1 tsp (5 ml) Dried Parsley
- 1 tsp (5 ml) Salt
- 1 cup (240 ml) Grated Vegan Cheese of Choice (topping)
Instructions
- Extract as much liquid as possible from the grated zucchini; refer to the tips above for effective methods.
- In a mixing bowl, blend the grated zucchini with mozzarella cheese, vegan Parmesan cheese, egg, garlic powder, dried parsley, and salt until well combined.
- Spread the zucchini mixture evenly on a parchment-lined baking sheet, aiming for a thin layer about half an inch thick to ensure a crispy base. Bake at 425°F for 15 minutes.
- After baking, sprinkle your preferred grated vegan cheese on top. I recommend mozzarella or a Mexican blend. Return to the oven for another 2-5 minutes, until the cheese is melted and golden.
- Cut into pieces and enjoy while warm.
