Ingredients
- 1 pound ground turkey
- 2 medium zucchinis, sliced into half-moons
- 1 tablespoon olive oil
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Peel and finely chop the onion, then add it to the skillet, sautéing until soft and translucent, about 3-4 minutes.
- Mince the garlic and add it to the skillet; cook for another 30 seconds until fragrant.
- Add the ground turkey, breaking it up, and cook for 6-8 minutes until fully browned.
- Prepare the zucchinis by trimming the ends and slicing into half-moons. Add the zucchinis to the skillet with the turkey.
- Cook for 4-5 minutes, until the zucchini starts to soften.
- Stir in the oregano, salt, black pepper, and crushed red pepper flakes.
- Pour the chicken broth into the skillet and stir to combine.
- Reduce heat to low and simmer for 3-4 minutes.
- Sprinkle Parmesan cheese over the skillet, stir until melted, and taste for seasoning.
- Serve immediately, garnished with extra Parmesan if desired.
