Description

A wholesome dish featuring ground turkey and zucchini, perfect for busy weeknights. This one-skillet meal is quick, nutritious, and packed with flavor.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced into half-moons
  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Peel and finely chop the onion, then add it to the skillet, sautéing until soft and translucent, about 3-4 minutes.
  3. Mince the garlic and add it to the skillet; cook for another 30 seconds until fragrant.
  4. Add the ground turkey, breaking it up, and cook for 6-8 minutes until fully browned.
  5. Prepare the zucchinis by trimming the ends and slicing into half-moons. Add the zucchinis to the skillet with the turkey.
  6. Cook for 4-5 minutes, until the zucchini starts to soften.
  7. Stir in the oregano, salt, black pepper, and crushed red pepper flakes.
  8. Pour the chicken broth into the skillet and stir to combine.
  9. Reduce heat to low and simmer for 3-4 minutes.
  10. Sprinkle Parmesan cheese over the skillet, stir until melted, and taste for seasoning.
  11. Serve immediately, garnished with extra Parmesan if desired.
