Description

A comforting casserole made with ground turkey, tender zucchini, and melted cheese, perfect for family dinners.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried Italian herbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant, about 2 minutes.
  4. Add the ground turkey and cook until browned, about 5-6 minutes.
  5. Stir in the diced tomatoes, herbs, salt, and pepper. Simmer for 3-4 minutes.
  6. Layer half of the zucchini in the baking dish, followed by half of the turkey mixture and half of the cheese. Repeat the layers.
  7. Bake for 30-35 minutes until bubbly and golden brown.
  8. Let it cool for 5 minutes before serving.

Notes

Use fresh zucchinis for the best flavor. Consider adding breadcrumbs on top for extra crunch.
