A comforting casserole made with ground turkey, tender zucchini, and melted cheese, perfect for family dinners.
Ingredients
- 1 lb ground turkey
- 2 medium zucchinis, sliced
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- 1 tsp dried Italian herbs
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with olive oil.
- In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant, about 2 minutes.
- Add the ground turkey and cook until browned, about 5-6 minutes.
- Stir in the diced tomatoes, herbs, salt, and pepper. Simmer for 3-4 minutes.
- Layer half of the zucchini in the baking dish, followed by half of the turkey mixture and half of the cheese. Repeat the layers.
- Bake for 30-35 minutes until bubbly and golden brown.
- Let it cool for 5 minutes before serving.
Notes
Use fresh zucchinis for the best flavor. Consider adding breadcrumbs on top for extra crunch.
