Description
A quick and delicious stir fry made with lean ground turkey, colorful vegetables, and a homemade teriyaki sauce that brings the family together.
Ingredients
- 450g (1 lb) lean ground turkey
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 medium bell peppers, thinly sliced
- 2 cups (200g) broccoli florets
- 1 cup (100g) thinly sliced carrots
- ½ cup sliced green onions (for garnish)
- ¼ cup (60ml) low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons of water (cornstarch slurry)
Instructions
- Make the Teriyaki Sauce: In a mixing bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, and cornstarch slurry. Set aside to thicken later.
- Cook the Ground Turkey: Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook for 5-7 minutes, breaking apart until browned and cooked through.
- Add Garlic and Ginger: Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
- Add Vegetables: Toss in sliced bell peppers, broccoli florets, and carrots. Stir and cook for about 5-7 minutes until vegetables are tender-crisp.
- Combine with Teriyaki Sauce: Pour the teriyaki sauce into the skillet, stir well to coat turkey and vegetables. Let it simmer for 2-3 minutes until the sauce thickens.
- Finish and Serve: Remove from heat, garnish with sliced green onions, and serve hot over rice, quinoa, or noodles.
