Description

Ingredients

  • 1 cup (240 ml) quinoa
  • 1/2 cup (120 ml) bulgur wheat
  • 2 cups (480 ml) vegetable stock
  • 6 bell peppers (3 green, 3 red)
  • 1 tablespoon (15 ml) olive oil
  • 1 lb (454 g) ground beef
  • 1 (14 oz (397 g)) can diced tomatoes, drained
  • 1 (6 oz (170 g)) can tomato paste
  • 1/2 vidalia onion, chopped
  • 4 garlic cloves, chopped
  • 1/4 cup (60 ml) soy sauce
  • 1/2 cup (120 ml) shredded cheddar cheese
  • salt
  • pepper


Instructions

  1. Set your oven to 350°F to preheat.
  2. In a pot, mix quinoa with vegetable stock. Bring to a boil, then lower the heat to let it simmer for 15-17 minutes until the stock is fully absorbed.
  3. While the quinoa cooks, slice off the tops of the bell peppers and remove the seeds. Place the hollowed peppers in a baking dish that’s been lightly oiled. Chop the tops to use in the meat mixture.
  4. Warm olive oil in a large pan over medium-high heat and sauté the garlic until fragrant.
  5. Add the chopped onion and chopped pepper tops to the pan. Cook for 2-3 minutes.
  6. Incorporate the ground beef, soy sauce, salt, and pepper into the pan. Cook until the beef is fully browned.
  7. Mix in the diced tomatoes and tomato paste. Stir well and let it cook until most of the liquid evaporates, about 5 minutes.
  8. Combine the cooked quinoa with the meat mixture, stirring until fully integrated.
  9. Stuff each hollowed pepper with the quinoa and meat blend. Bake in the preheated oven for 30 minutes.
  10. With 5 minutes left, sprinkle shredded cheddar cheese on each pepper. Continue baking until the cheese is melted and slightly browned.
  11. Serve right away and enjoy your meal! 🙂
