Ingredients

  • – 2 pounds (900 g) ground beef
  • – 2 tablespoons (30 ml) avocado oil
  • – Salt and pepper to season
  • – 1/2 medium-sized red onion, diced (or 2 teaspoons (10 ml) onion powder)
  • – 3 cloves garlic, minced (or 1 teaspoon (5 ml) garlic powder)
  • – 3 tablespoons (45 ml) taco seasoning (I used Dalkin&Co)
  • – 1 teaspoon (5 ml) salt
  • – 1/2 teaspoon (3 ml) pepper
  • – 3 tablespoons (45 ml) tomato paste
  • – (1) 15-20 ounce (425-567 g) jar of red salsa
  • – (1) 15-ounce (425 g) can of kidney beans, drained and rinsed
  • – 1 1/2 cups (240 g) corn (fresh or frozen)
  • – 1/2 cup (120 ml) fresh cilantro, chopped
  • – Juice of 1 lime
  • – Shaved iceberg lettuce
  • – Tortilla chips
  • – Chopped fresh cilantro
  • – Sliced avocado
  • – Taco sauce (I use Siete Creamy Jalapeño Botana sauce, but go ahead and use your favorite)


Instructions

  1. In a large pan or Dutch oven, warm the avocado oil over medium heat. Add the ground beef and cook for around 5 minutes, ensuring to crumble it into small bits.
  2. Incorporate the onion, garlic, taco seasoning, salt, and pepper into the pan and sauté for an additional 5 to 7 minutes.
  3. Mix in the tomato paste, salsa, kidney beans, and corn, ensuring everything is well combined; continue to cook for another 5 to 7 minutes.
  4. Take the pan off the heat and blend in 1/2 cup of chopped cilantro along with the juice from 1 lime.
  5. Present the dish with shaved iceberg lettuce, crushed tortilla chips, extra cilantro, avocado slices, and your preferred taco sauce.

Notes

  • For a healthier option, consider using lean ground beef or ground turkey instead of regular ground beef.
  • Adjust the amount of taco seasoning for a milder flavor if desired.
  • Enhance the dish with extra vegetables like bell peppers or zucchini for added nutrition and flavor.
